Beef Thor's Hammer

A spectacular bone-in beef shank, also known as a Thor's Hammer. Slow cook for 6–8 hours until the meat becomes beautifully tender and falls away from the bone. Perfect as a showstopping centrepiece for BBQs, smokers or the oven.

How To Cook

1. Remove the Thor's Hammer from the fridge 30–60 minutes before cooking and season generously with your favourite BBQ rub or simply salt and pepper.
2. Preheat your BBQ or smoker to 120–140°C for indirect cooking.
3. Place the beef away from the direct heat and cook low and slow for 5–7 hours, until the meat is tender.
4. During the final 30–45 minutes, brush with your favourite BBQ glaze or sauce, allowing it to caramelise.
6. Cook until the meat reaches an internal temperature of around 95–98°C and pulls away easily with a fork.
Remove from the BBQ and rest for 20–30 minutes before serving.
7. Pull or carve the beef from the bone and serve with your favourite BBQ sides.

About Our Beef

We source our grass fed beef from small local farms, including our own, then traditionally butcher and dry age in our bespoke ageing facilities in house. All of our beef is raised to the highest standards on a grass fed diet & comes from traditional native breeds cattle such as Hereford & Angus.
