How To Cook

1. Allow the joint to reach room temperature and pat dry before cooking.
2. Preheat the oven to 220°C/425°F/Gas Mark 7. Generously season the fillet with sea salt and freshly ground black pepper.
3. Heat an ovenproof pan on the hob. Add a little beef dripping, and once the fat is sizzling, place the fillet in the center of the pan. Caramelize the fillet on all sides until a brown crust forms.
4. Transfer the pan to the preheated oven and roast for 12-15 minutes. For best results, use a meat thermometer to check for an internal temperature of 47-51°C.
5. Remove from the oven and let the fillet rest for 15 minutes before carving.

About Our Beef

We source our grass fed beef from small local farms, including our own, then traditionally butcher and dry age in our bespoke ageing facilities in house. All of our beef is raised to the highest standards on a grass fed diet & comes from traditional native breeds cattle such as Hereford & Angus.
