Free Range Goose

Turkey is the traditional choice, but a goose makes just as good a Christmas dinner. Our geese are free-range, raised outdoors and fed on a natural wheat diet. Goose has rich, dark meat and a good layer of fat that keeps it moist as it roasts. Pour the fat off the tray as it cooks and use it for your roast potatoes.

Please note: this item is available for Christmas only. It will be delivered on 22nd or 23rd December, or you can collect it from High Trees Farm on Christmas Eve.

How To Cook

1. Take the goose out of the fridge 30 minutes before cooking. Remove the giblets and preheat the oven to 200°C (180°C fan) or Gas Mark 6.
2. Prick the skin all over with a skewer or fork, taking care not to pierce the meat. This lets the fat run out as it roasts. Rub salt over the skin and inside the cavity, and put a halved onion or apple inside if you like.
3. Sit the goose breast-side up on a rack or trivet in a deep roasting tin.
Roast for 30 minutes, then turn the oven down to 180°C (160°C fan) or Gas Mark 4. Allow 30 minutes per kg in total:
- 4kg: about 2 hours
- 5kg: about 2 hours 30 minutes
- 6kg: about 3 hours
4. Every 30 to 40 minutes, carefully pour off the fat from the tin and keep it for your roast potatoes. If the skin browns too quickly, cover it loosely with foil.
5. To check it’s cooked, push a meat thermometer into the thickest part of the thigh. It should read 75°C.
6. Rest the goose for 20 to 30 minutes, loosely covered with foil, before carving.

Cooking note: Ovens vary, so use these times as a guide. Always check the thickest part has reached 75°C before serving.

About Our Poultry

All our Christmas poultry comes from carefully chosen farms, including our turkeys, geese and ducks. The turkeys and geese are free-range and fed on a natural diet that includes home-grown wheat, which gives tender, full-flavoured meat.

They’re raised indoors while they’re young, then let outside to graze in grass paddocks as they grow. Each bird is dry-plucked and hung in cold rooms so the meat matures and the flavour develops.
