Rolled Turkey Breast With Bacon

1. Preheat the oven to 180°C (160°C fan) or Gas Mark 4.
2. Put the turkey on a roasting tray. If you like, drizzle it with a little olive oil or melted butter. Season with black pepper and herbs such as rosemary or thyme. The bacon is already salty, so you won’t need extra salt.
3. Cover the tray loosely with foil and roast for 25 minutes per 500g, plus 20 minutes:
- 2.5kg: about 2 hours 25 minutes
- 3kg: about 2 hours 50 minutes
4. Take the foil off halfway through so the bacon can crisp up. Baste with the pan juices now and again.
5. To check it’s cooked, push a meat thermometer into the thickest part. It should read 75°C.
6. Rest the turkey for 15 to 20 minutes, then remove the string and carve.

Cooking note: Ovens vary, so use these times as a guide. Always check the centre has reached 75°C before serving.
