Boneless Pork Loin

1. Preheat your oven to 220°C .
2. Pat the rolled pork loin dry with paper towels. Rub the skin with a little oil and season generously with salt, making sure it gets into the scores.
4. Place the rolled pork loin on a rack in a roasting pan, which helps the fat drain away from the meat as it cooks.
5. Roast the pork loin in the preheated oven for 20 minutes to start crisping the crackling.
6. Reduce the oven temperature to 160°C and continue roasting for about 1 hour and 15 minutes, or until the meat is tender and the crackling is crispy.
7. Check the internal temperature; it should reach 75°C. If the crackling isn't as crispy as you'd like, you can turn the oven back up to 220°C for a few minutes, but watch carefully to prevent burning.
8. Remove the pork loin from the oven and let it rest for 10-15 minutes before slicing.

Note: Cooking times may vary depending on the size of the rolled pork loin and your oven. Ensure the crackling is crispy and the internal temperature reaches 75°C before serving.
