Rolled Turkey Breast

1. Preheat the oven to 180°C (160°C fan) or Gas Mark 4.
2. Place the rolled turkey breast on a roasting tray. Brush lightly with olive oil or melted butter to help keep it moist and enhance browning.
3. Season generously with salt, pepper, and any herbs you prefer (such as rosemary or thyme).
4. Roast in the oven for 25 minutes per 500g, plus an additional 20 minutes. For a 2.0kg turkey breast, this totals about 2 hours. For a 4.0kg turkey breast, cook for about 3 hours and 40 minutes.
5. Baste the turkey occasionally with the pan juices to ensure it stays tender and juicy.
6. Check that the internal temperature reaches 75°C by inserting a meat thermometer into the thickest part of the breast.
7. Once cooked, remove from the oven and let it rest for 15-20 minutes before carving to allow the juices to redistribute and ensure a juicy result.
